In my family, we call them “Estonian Pancakes”, you can call them whatever you want. If you don’t know how to make these you need to learn.

Set the oven to 225 degrees and throw a big oven safe pan inside, this is where you put them while you cook the whole batch!

Make your crepe batter, no special instructions, just blend it smooth.

  • 2 Eggs
  • Dash of Salt
  • Splash of Vanilla (If you have it)
  • A few tablesppoons of Sugar
  • Flour to desired thickness

Add just enough flour to give it some body. It should still be thin and runny.

I use bacon grease on the skillet but you can use butter if you want. Heat the skillet to Medium Plus or hotter. Drop in enough batter and swirl the pan to spread it out. DO NOT WALK AWAY. Have the vent going. Flip after a couple minutes. When ready, transfer to oven. Continue until batter is done.

Serve with butter, sugar, jam or anything else you might like. Also works well cold for a snack later in the day. Enjoy. This recipe should make 8 – 10 crepes.
