Deep Fried Oyster Bits, Served with rice on the side!

I recently went down to the beach and grabbed some oysters while I was looking for crabs.


Oysters come in around 4th on my list after, Shrimp, Fish & Crabs so I thought I’d “Up the Game” & deep fry them for a change.
I started off by using steam to open them up, the easy way, and got the tools out.



Split them open, trim or clean off any ugly bits & split them again so you get 4 bite size pieces from each oyster.



Mix up the batter while heating up the oil. I was making a small batch so I adjusted the quantities as needed.
Oyster Batter (Deep Frying)
For a Dozen Large Pacific Oysters, cleaned and split into 4 pieces each(Approx. 48 Bits).
Dry Mix
- 3/4 c Flour
- 1/4 c Cornstarch
- 1 tsp Baking Powder
- 1 tsp Salt
- 1/2 tsp White Pepper
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 – 1/2 tsp Cayenne Pepper or Chili Powder
- 1/4 tsp Sugar
Wet Mix
- 1 Egg
- 3 Dashes Soy Sauce
- 3/4 c Cold Water to desired Thinning
Mix wet into dry, dip & fry! For smaller batches, just wing it!



Now, take those shells back down to the beach!
